The BEST Baked Cheesecake Ever!

My saintly sister-in-law, Amanda, made this cheesecake for us last week, and I am happy to report that it is absolutely sublime. And so easy. And uses very few ingredients!

Now in the interests of transparency, Amanda did something a little odd that I think worked unbelievably well! She decided to put the baked cheesecake under the grill for a few minutes before serving, to ensure the top was a lovely golden brown. The result was what tasted like a cross between baked cheesecake and creme caramel - feel free to give it a try if the urge strikes!

Jewish Cheesecake

Crust:

  • 3/4 packet Marie Biscuits, crushed
  • 125g margarine, melted
  • 15ml sugar

Filling:

  • 2x 250g cottage cheese (you can use cream cheese but cottage cheese tastes so much better. Weird, I know!)
  • 125ml cream
  • 3 extra large eggs
  • 200ml sugar
  • 5ml vanilla essence

Method:

  1. Preheat oven to 180 degrees C.
  2. Mix crumbs, margarine and sugar and press firmly onto the bottom and sides of a 22cm ovenproof dish.
  3. Mix cream cheese/cottage cheese, cream, eggs, sugar and vanilla together. Pour into crust. Place in oven and bake for 15 minutes. Then lower the temperature to 150 degrees C and bake for another 15 - 20 minutes. Switch the oven off and let the cheesecake cool in the oven. Leave the oven door slightly open. Take cake from oven when cooled and put in fridge.
