Christmas Puddings - With A Twist!

I am one of those seemingly rare people that adores Traditional Christmas Puddings! Then again, I also love Christmas Cake and cannot begin to fathom why some people host Christmas Cake Throwing Competitions on Boxing Day to see who can throw their cake the furthest. What a waste of delicious fruitcake!

That being said - there are many people that would prefer something lighter and not as filling on a hot summer's Christmas Day, which is why I have been on the hunt for a few ideas!

1. Christmas Pudding Ice-Cream

I have made this quite a few times and it couldn't be easier! Simply mix softened vanilla ice-cream with Christmas Pudding that has been crumbled into small pieces. Add chopped glacé cherries for an even more festive look. Refreeze and voila!

2. Malteser Christmas Pudding

This is such a fun alternative - and something the kids will love to both help you make and help you devour!

3. Pavlova Wreath

My future sister-in-law is Australian so we always make sure there is Pavlova on Christmas Day - this one is too beautiful (and a healthier lighter option after a heavy meal).

4. Meringue Roulade

I love the sound of this Meringue Roulade with Orange and Passion Fruit (with optional Grand Marnier too - yum!)

This can apparently be made in 20 minutes - I would say that makes it a winner in my books!
