Caramel Fruit Dip

This is such an amazing recipe for a yummy summertime snack or dessert! It was first made for me by my American friend Millie back in 1996 when she was living in Joburg and I can vividly remember one of her friends picking up the bowl and scooping out the remains with his finger!

This amazing Caramel Fruit Dip tastes similar to cream cheese icing, and is amazing served with sliced fruit that can be dipped into the bowl. My personal favorite is apples and/or strawberries ...

Now bear with me, because while this only has three ingredients, it is not an exact science and you may need to adjust it to your taste. (I have also googled the recipe and there are so many variations, which goes to show that you really need to mix, taste and tweak). 


  • 1 tub of cream cheese (Low Fat or Regular) at room temperature.
  • 1/2 cup to a full cup of brown sugar (dark brown works better than light brown, in my opinion!)
  • 1 - 2 teaspoons of vanilla extract
  • Any sliced fruit of your choice (Pink Lady apples from Woolworths are superb or any apples you have at home, strawberries are also amazing with this, as are bananas, grapes, pears, pineapple etc)


  1. Mix all ingredients together until smooth - either by hand or with a mixer. Check that the dip is sweet enough and that you have added enough vanilla extract and tweak accordingly.
  2. Place in the fridge for about 1 hour until the brown sugar has dissolved and you are left with a smooth dip.


  • You can also add 1 Tablespoon of Kahlua for some extra zing!
  • I've added cinnamon before and like it if I am just using sliced apples and pears.
  • For something a little more indulgent, add 1/2 cup of peanut butter (smooth or crunchy) and 1/4 cup honey to the recipe. Garnish with chopped peanuts. You can serve this version with apples, pears, bananas and pretzels (the salty combination is amazing). This also tastes beautiful on toast!
  • If you want to be VERY fancy, hollow out the bottom half of a pineapple to use as the dip bowl!
