Amazing Winter Comfort Food!

People, I have discovered Loaded Cauliflower Bake - a piping hot cheesy, bacony side dish that is the ultimate comfort food in winter. (I also tell myself that it is low-carb, therefore perfect for those following a Banting or Low Carb High Fat diet - but really, I just love the taste. And it's a great way of getting Kayla to eat cauliflower!)

I have also seen some versions that add 3 boneless, skinless chicken breasts that have been cooked and cubed - thereby transforming it into an entire meal in one dish. Kind of like a macaroni cheese of sorts. I haven't tried it with chicken - but plan to in future! Simply add the chicken along with the cauliflower and proceed as per below. You can also add 1 clove of minced garlic along with the bacon.

Oh, and did I mention that this recipe is EASY?

Ingredients

  • 1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
  • 6-8 strips of bacon cooked and crumbled 
  • 6 Tbs chopped Chives
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 2 cups Cheddar Cheese 
  • 1 container sliced mushrooms
  • Salt and pepper to taste

Directions

  1. Preheat oven to 200 degrees Celcius.
  2. In a large pot, boil water and cook Cauliflower for 8 - 10 minutes. Drain and let cool.
  3. In a large bowl, combine sour cream, mayonnaise, half the crumbed bacon, 3 Tbs chives, 1 cup of cheese, all the mushrooms and cauliflower and mix well. (Add the garlic and chicken here, if using - see my notes above.)
  4. Place in a baking dish and cover with the remaining 1 cup of cheese and the rest of the bacon crumbs. 
  5. Bake for 15-20 minutes until cheese is melted. Top with remaining 3 Tbs of chives and serve.
