"Fried" Honey Bananas

I am almost embarrassed to post this recipe because it is so unbelievably easy. But having made it last night for Stephen and Kayla who were rummaging through the cupboards looking for something "desserty" after supper, I have to admit that it is a complete WIN! And ... it's pretty healthy too!

We had it on its own, but would readily admit that it would be nothing short of AMAZING served over vanilla ice-cream. You could even add some toasted chopped walnuts when serving. And do be sure to use greenish bananas so they don't turn mushy in the frying pan!

The below recipe serves 1 - just double or triple the quantities depending on the number of people. Or how bad your day was.

Ingredients

  •  1 greenish banana, sliced
  •  1 tablespoon honey
  •  1 tablespoon water
  •  Cinnamon
  •  Olive oil or Coconut Oil

Method

1. Get your pan nice and hot over a medium to high heat.
2. Lightly drizzle olive oil into the pan - just enough oil so that the bananas don't stick.
3. Arrange banana slices in pan and cook for 1-2 minutes on each side until golden brown.
4. Meanwhile, whisk together honey and 1 tablespoon of water.
5. Remove pan from heat and pour honey mixture over banana.
6. Allow to cool slightly and sprinkle with cinnamon.
7. Devour.
